Apple-Nut Coffee Cake

Recipe : Apple-Nut Coffee Cake
Procedure : 1 c Unbleached all-purpose flour

1/2 ts Baking powder

1/2 ts Baking soda

1/8 ts Salt

1/2 c Granulated sugar

1/4 c Shortening

1 Egg

1/2 ts Vanilla

1 Apple, cored and chopped

1/2 c Sour cream

1/4 c Walnuts, chopped

1/4 c Brown sugar

1 tb Butter

1/2 ts Cinnamon

In a medium bowl, stir together flour, baking powder, soda and salt. Set aside. In a large bowl, beat together sugar and shortening till fluffy. Beat in egg and vanilla. Stir about half the dry ingredients into the sugar mixture. Mix in sour cream, then stir in remainder of dry ingredients. Mix in apple. Spread evenly in a lightly greased and floured 8″ round pan. In a small bowl, mix nuts, brown sugar, butter and cinnamon till crumbly. Sprinkle over coffee cake. Bake in a 350^F oven for 25 to 30 minutes, or until cake tests done. Serve warm. Beer Bread #1

Recipe : Beer Bread #1
Procedure :

From: NCBK03B 3 c Self-rising flour*

3 tb Sugar

12 oz Warm beer.

Place in a greased and floured loaf pan. Bake at 350 for 1 hour. * Or regular flour, 3 & half tsp. baking powder, and 1 & half tsp. salt This is the only simple recipe I know and it happens to be the one you want. I think this is one of the only breads you can’t mess up on.

Apple Butter-Streusel Muffins

Recipe : Apple Butter-Streusel Muffins
Procedure :

Vegetable cooking spray — optional 1 1/2 c All-purpose flour

1/2 c Wheat germ

1/2 c Firmly packed brown sugar

2 1/2 ts Baking powder

1/2 ts Salt, optional

1/2 c Apple butter

3/4 c Skim milk

3 tb Margarine; melted

2 Egg whites; slightly beaten

——————————STREUSEL TOPPING—————————— 1/8 ts Ground cinnamon

3 tb Wheat germ

2 tb Firmly packed brown sugar

1 tb All-purpose flour

1 tb Margarine; melted

Preheat oven to 400 F. Line 30 mini-muffin pan cups or 12 medium muffin cups with paper liners, or spray bottoms only wtih cooking spray. In medium bowl, combine flour, wheat germ, brown sugar, baking powder and salt; mix well. In small bowl, combine apple butter, milk, margarine and egg whites until well blended. Add to flour mixture, stirring just until dry ingredients are moistened. Fill muffin cups almost full with batter. Prepare streusel topping (see below); sprinkle evenly over batter, patting gently. Bake mini-muffins 12 to 15 minutes, and larger muffins 20 to 22 minutes, or until wooden toothpick inserted in center comes out clean. Serve warm. STREUSEL TOPPING: in small bowl, combine all ingredients; mix until well blended. Notes: To freeze, wrap muffins securely in foil or place in freezer bag. Seal, label and freeze. To reheat muffins, unwrap; microwave on High (100% power) about 30 seconds per muffin. Per Serving (1 mini-muffin): About 75 cal, 5 g pro, 13 g car, 2 g fat, 24% cal from fat, 0 mg chol, 65 mg sod. Apple Coffeecake

Recipe : Apple Coffeecake
Procedure : 1/2 c Brown sugar

2 tb Flour

2 tb Margerine

1 ts Cinnamon

1/2 c Sugar

1/4 c Shortening

1 Egg

1/2 c Milk

1 1/2 c Unsifted flour

2 ts Baking powder

1/2 ts Salt

2 c Thinly sliced apples

Blend brown sugar, *2* tbs flour, margerine and cinnamon in bowl,set aside. Combine sugar,shortening and egg beating throughly. Stir in milk. Mix 1 1/2 c flour,baking powder and salt. stir into egg mixture just until smooth. Spread 1/2 the batter in a greased 9 in square pan. Cover with 1/2 the apples; top with 1/2 of the brown sugar mixture. Repeat layers. Bake at 375 for 45-50 min.

Almond Poppy Seed Muffins

Recipe : Almond Poppy Seed Muffins
Procedure :

3 c Flour

2 1/4 c Sugar

1 1/2 ts Baking powder

1 1/2 ts Salt

1 1/2 c Vegetable oil

1 1/2 c Milk

3 Eggs

1/2 ts Almond extract

1 1/2 tb Poppy seeds

Preheat oven to 350 degrees. Grease or use muffin papers to line two 12-cup muffin tins. Combine flour, sugar baking powder, and salt. In another bowl whisk oil, milk, eggs and extract till smooth. Add dry ingredients mixing till moist. Then gently stir in all the poppy seeds. Fill muffin tins and bake 30 minutes.

Apple Crunch Coffee Cake

Recipe : Apple Crunch Coffee Cake
Procedure :

-JUDI M. PHELPS 2 c Bisquick baking mix

2/3 c Milk or cold water

3 tb Sugar

1 Egg

2 c Apples (about 2) — thinly

-pared and thinly sliced —–STREUSEL TOPPING—– 2/3 c Bisquick baking mix

2/3 c Brown sugar — packed

1 t Ground cinnamon

1/2 ts Ground nutmeg

1/4 c Firm margarine or butter

—–GLAZE—– 1/2 c Powdered sugar

2 To 3 teaspoons milk

Heat oven to 400 degrees F. Grease square pan, sugar and egg; beat vigorously 30 seconds. Spread half of the batter in pan. Arrange apple slices on batter; sprinkle with half of the Streusel Topping. Spread remaining batter over apple slices; sprinkle with remaining topping. Sprinkle with nuts. Bake until wooden pick inserted in center comes out clean, about 25 minutes; cool. Drizzle with glaze.

Streusel Topping: Mix baking mix, brown sugar, cinnamon and nutmeg, cut in margarine until crumbly. Glaze: Mix powdered sugar and milk until smooth and of desired consistency. Makes 8 servings. Source: Clipped recipe from magazine. Shared by Judi M. Phelps. jphelps@slip.net or jphelps@best.com
